Analysis of Tasting Expressions for Japanese Sake

Abstract(in English) The purpose of this study is to develop the interactive recommendation system of the Japanese Sake. Furthermore, we clarify how tasting expressions for Japanese sake is expressed through the ordinary interaction about Japanese sake. We develop the system can recommend Japanese sake to the user's palatability by narrowing the Japanese sake which the system recommend to their palatability from the interaction with the user even if they can't express the specialistic tasting. In this paper, we analyze how tasting expression is used as tasting expression for Japanese sake from the video and transcriptional data of the drinking session to realize the system. It was found through our analysis that we need five new terms, "condition representation", "gesture representation", "deficient language", "sequence representation" and "notice" as the cognitive representation of tasting for Japanese sake. Furthermore, it was clear that the interaction is necessary for the recognition and verbalization of taste, and the opportunity for notice and learning.
