The current state and future of the development of kansei biosensors that measure tastes and smells

Abstract(in English) A taste sensor and electronic noses are called together "Kansei-biosensors". The taste sensor developed in Japan comprises of several receptor parts made of lipid/polymer membranes. It can respond to each taste quality (sourness, saltiness, sweetness, umami, bitterness) and astringency, and hence quantify them. This kind of selectivity is called "global selectivity", different from usual high selectivity where each chemical substance is discriminated. Over 300 taste sensors have been sold in the world so far. There have been several kinds of electronic noses using different materials and mechanisms. In this research, a surface-modified impedance measurement and a Surface-Plasmon-Resonance (SPR)-type measurement were adopted. As a result, description of odor quality and high-sensitive detection of explosives were successful.
