Safety of Food Processing Machine : On Safety of Newly Developed High-Pressure Food Processer in Niigata-JST Project

Abstract(in English) High pressurizing process is available for some kinds of food to add new value on them. However, high pressure processing machine has been large and expensive. To innovate on this situation, under a joint program of JST (Japan Science and Technology Agency) and Niigata Prefecture, some manufacturing companies and Nagaoka University of Technology developed a new machine, which are usable in small and medium size enterprises. The process --- conceptual design, risk assessment, design of safety function, mechanical and electronic design and implementation, and mock safety certification --- was carried out by this group. The safety function was designed from the risk assessment.
