Abstract(in English) The fermentation process monitoring of fermentation product is very useful in the development of fermentation condition and method. As for the previous research of fermentation process monitoring, there are many reports of local monitoring with pH sensor and gel sensor. Present research tries comprehensive lactic fermentation monitoring with ultrasonic wave. By irradiating ultrasonic wave inside the fermentation container and observing the changes of the wave which is separated to direct wave and reflected wave, we expect to monitor a comprehensive lactic fermentation inside the fermentation container. This research actually ferments the milk in the container and observes the propagation property until the yogurt completely forms. As the result of the experiment, we confirmed changes in sound velocity and sound pressure from the fermentation of the yogurt.
