Measurement of Cole-Cole Plot and Parameter Estimation for Quality Evaluation of Wine

Abstract(in English) In recent years, people have much interest in the quantitative evaluation of taste, which is one of five senses in humans, while its evaluation is not so easy because taste is generally caused by a chemical reaction of food materials to nose cells. On the other hand, "quality" guaranteeing the taste of food is being so far evaluated by chemical analyses of component and expert's sensuality. In the previous study, in order to evaluate the quality of wine, we measured the complex relative permittivity in the frequency range from 10MHz to 6GHz with a network analyzer, and showed a possibility that the ingredient amount and alcohol concentration of wine can be evaluated from the Cole-Cole plot. In this study, we have estimated the Cole-Cole plot parameters of wine for its quality evaluationl. As a result, we have found that the alcohol concentration of wine can be estimated from DC relative permittivity ε_ and the ingredient component can be evaluated by the parameters ω_mτ_0 and ω_mτ where ω_m is the angular frequency at local minimum point of the Cole-Cole plot, and τ_0 and τ are the relaxation time constant.
