Delicious-looking evaluations on apples

Abstract(in English) The visual appearance of food is important information for decision-making on purchasing "delicious-looking" foods. But there are few scientific studies about sensory quality on "delicious-looking" foods. So it is unclear that how people evaluate foods from their appearance and what characteristic is most essential at the moment of purchase a "delicious-looking" foods. We performed some research to investigate those questions using apples. At first we asked effective factors to vegetable shop owners and consumers. Their opinions focused on color, shape, and surface. Then we studied the important ratios of the three factors with Analytic Hierarchy Process technique. Results showed that surface factor was most important and shape was least.
