Evaluation of safety of foods using taste sensor

Abstract(in English) Currently, food industries have problem that foreign bodies have mixed with the foods and beverages, but the evaluation to detect mixing of the foreign body into them has not been established yet. To solve this problem, using taste sensor that we have developed, we tried to investigate new evaluation to detect mixing of foreign body into the foods and beverages. We prepared the samples by adding hypochlorous acid to the milk and cyanide to green tea, respectively, and measured the samples using taste sensor. As a result, it is possible to distinguish between control sample and the sample which foreign bodies were added to. Therefore, it is thought that it is effective to make use of taste sensor in evaluating the safety of foods.
