Abstract(in English) This report presents a metabolic enzyme sensing technique by using optical-fiber-bio-sensor and its application to food quality testing. In recent years, various type of chemicals have been found in food as environmental pollutants or food additives or drags at living and it is doubted suffering our health. It is well known that DNA induces cytochrome P450 (CYP) to metabolize such chemicals for keeping safety of life. Therefore, we can conclude that foods in which cytochrome P450 induced at living time due to the chemicals may be out of quality to eat. The enzyme sensing technique based on the optical-fiber-bio-sensor is applicable to the food quality testing. The results obtained from the sensing to food gives us plenty of information about its quality about chemicals and also health damages.
