Signal processing for flavor expression using combination of taste sensor and odor sensor

Abstract(in English) For developing a hybrid sensing device that can detect flavor, it is required to establish a method of expression of flavor using combination of taste sensor and odor sensor. In this paper, we propose a method of hierarchical signal processing which consists of 2-layers of principal component analysis (PCA) and a neural network. The 2-layers of PCA is to integrate taste and odor sensing signal together as a measure of flavor, and the neural network using the results of PCA is to estimate scales of specific tastes. We applied the method to integrate outputs of a taste sensor with five ion selective electrodes and an odor sensor using commercially available metal oxide semiconductor gas sensors. The possibility of flavor expression was shown by some experiments.
