Abstract(in Japanese) (See Japanese page)
Abstract(in English) For the quality control in food industry, a high ability taste sensor is required to be developed. This research is concerned on the development of highly functional taste recognition system by combining conventional taste sensor and odor sensor. As the taste sensor, commercially available ion sensors were used and metal oxide semiconductor gas sensors were used as the odor sensor. It was shown that the novel system has higher recognition ability for the measurement of canned coffee compared with the conventional taste sensor. The system may open new possibility of highly functional taste sensor.
