Abstract(in English) This paper reports new techniques to improve selectivity of a multichannel taste sensor using lipid/polymer membranes developed by us. We discovered that concentration of charged lipid and non-charged lipid in a membrane have great influences on sensitivity and selectivity to basic tastes. This lipid membrane is composed of charged lipid, non-charged lipid and polyvinyl chloride(PVC). We developed 4 types of new lipid membranes which are more selective to each basic tastes than conventional lipid membranes by optimization of concentration of charged lipid and non-charged lipid in a membrane. We had been succeeded in high sensitivity to adsorptive taste substances(bitter and umami)by measuring method CPA(Change of lipid membrane Potential caused by Adsorption). With respect to sourness, saltiness, bitterness and umami, high selectivity is obtained with using those new lipid membranes and measurement method CPA.
