| Abstract(in English) | The system that evaluates the beef taste objectively by using taste sensors was developed. Although it has carried out an application to various foods, it was liquid form. Therefore it measured after making a liquid state because meat is a solid state. It tried to investigate regarding the relation between sensory test and taste sensors. Taste sensors correlate closely with fattiness, smoothness, durability and comprehensive evaluation of taste and its coefficient of correlation is 0.8 or more. It is effective that taste sensors evaluates the beef taste objectively. |
