Measurement of Taste of Green Tea Using a Multichannel Taste Sensor

Abstract(in English) The taste of green tea was investigated using a multichannel taste sensor. As a result, the sensor measured the taste in itself, and it was found that electric potential patterns of green tea extracted at lowtemperatures added to tannic acid were close to those at hightemperatures. This result supported a report that the taste of green tea is influenced by its extracted temperature. The sensory evaluation obtained the same result. In addition, theanine showed a high correlation with GMP and glycine. This result implies that theanine produces sweet taste at low concentrations, while it has umami taste at high concentrations.
