A 3D motion capture-based analysis of food capturing with a spoon

Abstract(in English) Food capturing that is a part of ingestion has two different functions such as "eating-tool operation" and "food intake by lips". Although both functions are known to be coordinated with each other, they have rarely been studied comprehensively using data of simultaneous measurement. Then we constructed a system capable of measuring body motion and lip pressure on the bowl of spoon simultaneously, and analyzed food capturing where adults naturally eat food by means of a spoon, as a preliminary study. Cheese and yogurt were used as test food and an amount of food was standardized as 3g, 5g and 10g. Experiments employing 8 male adults revealed that an amount of food and a kind of food significantly affected the amount of spoon insertion and lip pressure, respectively, while both did not affect the orientation of spoon during food capturing.
