Challenges in Japanese Language Translation in the Field of Cooking

Abstract(in English) With the increase in foreign tourists to Japan, restaurants are more frequently required to provide English menus. There is not one standard translation for each dish because different notation methods in restaurant menus and cookbooks result in different names for the same dish. In some cases, even if the English itself is correct, the English notation is a mistranslation that creates an image of a completely different dish. In this study, my aim is to clarify the various barriers faced when attempting to translate a wide variety of dish names in Japanese cuisine, paying special attention to “understanding what kind of food it is”, with the ultimate goal of providing concrete measures to resolve these issues. In this paper, I first report my analysis on dish names in Japanese cuisine, as well as describe potential issues in translating them.
