[Invited Talk] Human Behavior Sensing and Analysis Technologies for Kaizen Activity in Labor Intensive Services Industry

Abstract(in English) In labor-intensive service fields, it is expected that productivity will be improved by introducing intelligent machines such as robot technology and artificial intelligence technology. However, in order to construct such systems in which human and intelligent machines harmonize in service fields where diverse people are working, it is necessary to objectively and quantitatively evaluate the change of human behavior caused by introducing the system. Human behavior sensing and analysis technologies for supporting kaizen activity in the field of service engineering can be applied to the evaluation process. In this article, we outline the measurement and analysis technology used especially in some case studies held on the Japanese cuisine restaurants. We also introduce the on-going case study of employee behavior change caused by introduction of transport robot to Japanese restaurant.
