Abstract(in English) | The taste of the foods and beverages is perceptual experience that consists of integration of several senses, such as gustation, olfaction, tactile sensations and so on. Lemon is known as a fruit that has fresh flavor and strong sourness, and is frequently used as characteristic beverage flavor. And the balances of sweetness and sourness in lemon-flavored beverages are important factors in lemon flavor. Three hundred twenty five people participated in this study, and were asked to taste and to evaluate the 15 kinds of lemon-flavored beverage. The effects of sweetness and sourness in the lemon-flavored beverages in taste and palatability evaluations are discussed. |
