Abstract(in English) New research area, Service Science / Engineering, is at present under vivid discussion to realize servitization of manufacturing industries, adding of value in service industries and value creation in the society. This presentation introduces the current situation of the research area of Service Engineering and systems approach for service-system-design. Research activities in restaurant business which labor productivity is relatively low among service industries are also described; kitchen layout design method using simulation is introduced.
