Abstract(in English) There is a large demand of real-time measurement of thermal environment parameters in food processing ovens in the food science fields. The authors have developed some measuring device of dry- and wet-bulb temperatures, and have been investigated on acquisition of the thermal environment near the target food placed in a oven together. In the previous measuring device, the authors employed many thermocouple amplifiers on a circuit board, therefore there were some problems of expensive, large and so on. In this report, we have employed two delta sigma A/D converters with enhanced technologies and have evaluated their performance. We also examine the improvements of accuracy of temperature at the cold junctions by using Pt100 sensor devices between connectors of the thermocouples.
