Lower and higher level gustatory information affected by pictures of foods

Abstract(in English) In this research, two experiments were conducted to verify whether effect of visual food images on taste sensation. In Experiment 1, subjects observed 25 pictures of dishes, and evaluated their impression in 20 paired semantic words (SD method). As a result, "refreshing" and "gorgeousness" were extracted as the factors of the impression. In Experiment 2, subjects ate four kind of taste stimuli made of gelatin, sugar, and amino acid, observing the picture of dishes. And they evaluated "refreshing", "gorgeousness", "sweetness" and "sourness" taste sensations of the stimuli. As a result, the sensations of lower level, "sweetness" and "sourness" were not affected by the pictures. However, the sensations of higher level, "refreshing" and "gorgeousness" were affected. When the picture of a salad, which has the highest “refreshing” impression factor in experiment 1, was presented, the evaluation of "refreshing" is higher even if the taste stimuli were identical. Therefore, it is suggested that the images and memory of food affect taste sensation.
