Abstract(in English) We have been studying on the aging of meat and the visualization of its deliciousness so far. In this study, as a part of our efforts, we measured the state of meat using bioelectrical impedance to determine the extent to which differences in aging condition affect the aging of beef. As a result, it was found that when aging beef, aging proceeds in a short time using electricity, but it was suggested that it is necessary to consider the optimization conditions at that time.
