Preference Analysis for Japanese Sake Evaluation Data Base on Different User Properties

Abstract(in English) Every year, a contest to evaluate the quality of Sake is held, which is called Zenkoku Shinshu Kanpyokai. Sake experts participating in the contest aim to improve quality of Sake and brewing technologies. On the other hand, ordinal consumer evaluation seems to be different from that of experts. Consumers usually evaluate Sake to choose suitable ones to their own preference and situation. These gaps between expert and consumer evaluation should be buried, because Sake bridges expertized brewers and ordinal consumers. Therefore, we have developed an application to collect quantitative evaluation data for taste of Sake. Then, a Sake tasting experiment with five brands is conducted with the developed application. As the results, taste evaluation difference between an expert and students (ordinal consumers) is analyzed based on the experimental data.
