[Invited Talk] Sake and Culture of Ryotei and Geisha

Abstract(in English) The most proper place to enjoy Sake could be Ryotei which is a traditional high class Japanese restaurant. Ryotei is a work place of Geisha and located in a place called “Kagai”. In Kagai, all kinds of traditional Japanese culture have been inherited, such as sake, cuisine, dance, music, tea ceremony, flower arrangement, costume, along with traditional alleys and architectures. In this sense, Kagai can be described as the last pure Japanese space. Today there are about 50 active Kagai throughout the country. Furumachi in the center of Niigata City has been one of major Kagai in Japan since Edo period. Because there was no damage by the WWII in the district, many historic buildings are left including Ryotei. Thus, Furumachi is one of the best Kagai with historic environment in Japan.
