Study on Sake Preference Analysis by an Evaluation Data Acquisition Application

Abstract(in English) There are over 1400 Sake breweries and 10000 or more brands in Japan, so that it is very difficult to discover sake fitting for yourself. Consumers often try to search sake brand information on the dedicated sake Web sites and SNS (Social Network Service). However, the information is described in various expression and the consumer can be easily confused. In the other hand, sake experts aim to improve quality of Sake and brewing technologies, but their opinions do not necessarily synchronize with the consumer opinions. Accordingly, we propose an application to collect quantitative evaluation data for Sake. In the report, the application whose input items are related with Sake ingredients is overviewed. A Sake tasting experiment with five brands is conducted with the developed application. Relationship between consumer evaluation and Sake characteristics is also reported as the analyzed results of the experimental data.
