Effects on cerebral blood flow caused by Tabasco peppers with intraoral presentation using fNIRS

(in English) There are some studies on taste evaluation as the brain function researches when a stimulus is presented in the oral cavity. But few are reported on the brain activity when a pungent peppery sauce is presented to us. The authors use Tabasco® sauces as a hot and spicy stimulus, and investigated the relationship between the amount of Tabasco® and change of oxygenated hemoglobin in the front lobe. The experimental results show that the amount of change in concentration of the oxygenated hemoglobin is increasing at the lateral side of the frontal lobe (channels 1 and 16 of fNIRS) almost according to the concentration of Tabasco® sauce.
