Relationship between taste evaluation of Ezoshika meat and electrical measurement

(in English) To reduce the damage on agriculture and forestry caused by the increase in the number of Ezoshika, the utilization of Ezoshika is actively being studied. However, its demand has not increased significantly, and new measures are considered essential. We try to evaluate freshness and aging of meat by measuring bioelectrical impedance (BIA) of Ezoshika meat. As a result, it became clear that the BIA method is effective for estimating freshness and preservation state of meat. Furthermore, organoleptic tests were conducted, and the questionnaire result and the electrical measurement result of them were considered together, and the correlation between them was clarified, and the details will be reported.
