Interaction among sweetness, sourness and lemon flavor on sensory evaluation of lemon-flavor beverages

(in English) The taste of the foods and beverages is perceptual experience that consists of integration of several senses, such as gustation, olfaction, tactile sensations and so on. Lemon is known as a fruit that has fresh flavor and strong sourness, and is frequently used as characteristic beverage flavor. And the balances of sweetness and sourness in lemon-flavored beverages are important factors in lemon flavor. Three hundred twenty five people participated in this study, and were asked to taste and to evaluate the 15 kinds of lemon-flavored beverage. The effects of sweetness and sourness in the lemon-flavored beverages in taste and palatability evaluations are discussed.
