The electrical and optical characteristics of the mixed lipid membrane for several umami solutions were examined. These characteristics of the membrane were measured using the complex measurement system with electrical and optical component. The possibilities of taste sensing were also discussed on the electrical and optical response pattern of the membrane characteristics. Different patterns were obtained from the soup stock among the sample solutions. As a result, the strength of umami taste was reflected in the optical OPt axis of the response pattern. Furthermore, the strength of each axis in umami taste agreed well with the sensory evaluation. |
